- 1 lb sliced bacon diced
- 1 medium onion diced
- 6 large eggs beaten
- 4 cups frozen shredded hash browns thawed
- 2 cups shredded cheddar cheese
- 1 ½ cups cottage cheese
- 1 cup shredded swiss cheese
- 1 tsp kosher salt
- 1 tsp fresh ground black pepper
Preheat the oven to 350F and grease a 9x13 baking dish.
In a large saute pan, add the bacon and cook over medium-high heat for 5 minutes. Add the onion and continue to cook until the bacon is crispy and onions are browned. Drain and set aside.
In a large mixing bowl, combine the rest of the ingredients. Add the bacon and onions and stir to combine. Pour into the prepared baking dish.
Bake for 30-40 minutes or until a knife inserted into the center comes out clean. Rest for 10 minutes before serving.
- Thaw the hash browns first. Frozen hash browns can release extra moisture as they bake, making the casserole watery.
- Drain the bacon well. Removing excess grease keeps the casserole rich without becoming oily.
- Use room-temperature eggs. They mix more evenly with the other ingredients and help the casserole bake more uniformly.
- Don't skip the resting time. Letting the casserole sit for about 10 minutes after baking makes it easier to slice and serve.
