Mixing bowls
- 1 large sweet potato
- 2 Tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
- ¼ teaspoon cayenne pepper
- Nonstick cooking spray
Using a mandolin slicer, cut the sweet potato into slices about ⅛” thick.

Place in a bowl of cool water and let sit for 20 minutes to release the excess starch. Drain and pat dry with a paper towel.
Preheat an air fryer to 350 degrees Fahrenheit.
In a mixing bowl, toss the potato slices with the olive oil to coat evenly. Sprinkle over the salt, pepper, paprika and cayenne and mix together.

Spray the inside of the air fryer basket with the cooking spray. Line the bottom with an even layer of the potato slices and cook for 15 to 20 minutes until golden brown. Remove and place on a paper towel lined plate to cool. Depending on the size of your air fryer, it may be necessary to cook these in multiple batches.

- Choose sweet potatoes that are firm and similar in size for even slices.
- Toss slices gently so they don’t break before cooking.
- Remove any chips early if they brown faster than others.
- Store completely cooled chips to maintain crispness.
- For extra flavor, sprinkle a little flaky sea salt right after cooking.
