Red White and Blue Popsicles

These homemade red white and blue popsicles are made with fresh fruit, yogurt, and just a little bit of extra sugar. They are a great choice for kids and adults!

Ingredients

  • 1 cup chopped strawberries
  • 1 tablespoon powdered sugar
  • 1/3 cup water
  • 1/4 teaspoon vanilla extract
  • 1 cup vanilla Greek yogurt
  • 2 ripe bananas
  • 1 cup fresh blueberries
  • red and blue gel food coloring (optional)

Instructions

  • Add strawberries, powdered sugar, water, and vanilla to a blender. Puree until very smooth.
  • Add 2 drops of red gel food coloring, if using, and blend again.
  • Pour the red mix into popsicle molds, filling them ⅓ of the way up the mold.
  • Place the popsicle molds in the freezer and chill for at least 1 hour.
  • Blend the vanilla yogurt and 1 ripe banana together until smooth.
  • Pour the yogurt layer into the popsicle molds so they are ⅔ of the way full. Place the molds into the freezer while you make the last layer.
  • Blend the blueberries and remaining banana until smooth. Add the remaining 2 tablespoons of vodka as well, if using. Add 4 drops of blue gel food coloring and blend again.
  • Pour the blue layer into the popsicle molds, filling them to the top.
  • Add the popsicle sticks and freeze for at least 4 hours or until completely frozen.
  • Unmold the popsicles and enjoy!

Notes

  • After you add the white layer to the popsicle molds, you don’t need to freeze the pops completely before adding the last blue layer. You actually don’t want the white to be too hard or the popsicle stick won’t go through! Just add the white layer and put the pops in the freezer to stay cold while you make the blue. Then finish the pops, add the stick and freeze completely.
  • Make boozy popsicles by adding 2 tablespoons of vanilla vodka to the strawberry layer and another 2 tablespoons of vanilla vodka to the blueberry layer. Be sure to label these pops as "adults only"!
