This is a simple, low-fat version of the classic spinach quiche we all love but without butter and cream. It is light and fluffy and packed with a vitamin punch thanks to the spinach.

Ingredients

  • 1 pie shell, unbaked
  • 1 cup evaporated milk
  • 1 cup shredded cheddar cheese
  • 1 10 oz package frozen, chopped spinach
  • 3 eggs

Instructions

  • Preheat oven to 350 degrees F.
  • Mix all ingredients together until light and fluffy.
  • Pour into pie shell.
  • Bake for 50-60 minutes until just set in center and crust is light brown.
  • Let sit for 10 minutes to cool before serving.
