Chocolate Chip Banana Muffins

These banana chocolate chip muffins will be the best way to start off your morning. The muffins are the perfect balance of sweetness.

Ingredients

  • 3 ea medium ripe bananas mashed
  • cup melted butter cooled
  • 1 ea large egg
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • cups granulated sugar
  • 1 cup semi sweet chocolate chips

Instructions

  • Preheat the oven to 375F. Line muffin tins with paper liners.
  • In a large mixing bowl, combine the mashed bananas, butter, egg, and vanilla. Stir to combine.
  • Add the remaining dry ingredients to the banana mix and stir to combine. Be sure to not overmix.
  • Spoon the batter into the muffin tin- about ¾ full.
  • Bake for 17-20 minutes or until a cake tester comes out clean.
