BBQ Ribs

Ingredients

  • 2 racks country ribs
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • ½ tsp cumin
  • 1 tsp chili powder
  • ¼ cup brown sugar
  • 1 tsp dried oregano
  • 1 cup chicken stock
  • 2 tbsp apple cider vinegar
  • 1 ½ cups BBQ sauce

Instructions

  • Preheat the oven to 250F. Peel off the tough membrane from the boney side of the ribs and discard.
  • Combine the garlic powder, onion powder, paprika, salt, pepper, cumin, chili powder, brown sugar, and oregano in a small bowl and stir to combine. Cover the ribs with the spice mixture and refrigerate for 1 hour or overnight.
  • In a roasting pan, combine the chicken stock and vinegar. Add the ribs and cover the pan tightly with foil. Bake for 2 hours. Remove the ribs from the pan and transfer the leftover stock to a small saucepan. Bring to a boil and reduce by half. Add the BBQ sauce and set aside.
  • Preheat a grill to medium high. Grill the ribs for 5-6 minutes on each side or until slightly charred. Cut into individual ribs and toss in a bowl with the sauce.
