Bacon & Gruyere Sous Vide Egg Bites
These pressure cooker Bacon & Gruyere Sous Vide Egg Bites are just like the ones you’d find at specialty coffee houses and delis.
- 1 Package of Smithfield Bacon
- 4 eggs
- 1/2 cup cottage cheese
- Gruyere cheese
Blend: together the eggs, cottage cheese and cheese in a blender until all incorporated. I believe it’s under 30 seconds to have it all mixed well.
Add: cooked bacon strips to the inside of a silicone mold and a little cheese.
Pour: the egg mixture into the silicone mold evenly.
Cover: the egg mold tightly with aluminum foil.
Add: the trivet that came with your pressure cooker right into the pot with 1 cup of water.
Lower: the silicone mold into the instant pot and cover with the lid with the steam valve closed.
Set: the pressure cooker to Steam for 10 minutes. When the timer goes off, manually release the steam and carefully open the lid when there is no more steam present.
Remove: the silicone mold from the instant pot (carefully – it will be hot!) and uncover. Remove the Sous Vide Bacon and Gruyere Egg Bites from the molds and enjoy!
