Wacky Cake

Wacky cake is an easy cake recipe your whole family will love!

Because it’s made without eggs, it’s the perfect recipe to make when you don’t want to run to the grocery store.

INGREDIENTS FOR CAKE

All-purpose flour Granulated sugar Unsweetened cocoa powder Kosher salt Baking soda Vanilla extract White distilled vinegar Canola oil Water

INGREDIENTS FOR FROSTING

Unsalted butter Unsweetened cocoa powder Powdered sugar Vanilla extract Whole milk

Preheat the oven to 350ºF and grease a 9×13 cake pan with butter or cooking spray.

1

Combine the flour, sugar, cocoa, salt, and baking soda in a mixing bowl and whisk them together.

2

Add the remaining ingredients to the dry ingredients. Whisk everything together until the batter is smooth.

3

Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

4

Use an electric mixer with the paddle attachment to cream the butter and cocoa until the mixture is smooth and fluffy.

5

Beat in the sugar and vanilla, then slowly add the milk until the frosting reaches your desired consistency. Scrape the sides of the bowl as needed.

6

Use an offset spatula to frost the cooled cake, then cut, plate, grab a fork, and dig in!

7

Wacky cake is best served the day it’s made. But if you have leftovers, store them in the fridge for up to 5 days.

8

Wacky cake gets its name from the fact that it doesn’t contain any eggs or dairy, which is pretty wacky when you think about it.

And we still make it today because: it’s really good! Wacky cake is rich, moist, and chocolatey.
