Strawberry Pound Cake

This Strawberry Pound Cake features a tender, moist cake infused with sweet strawberries in every bite and a sweet, fruity glaze!

1 cup plain Greek yogurt 1 cup sugar 3 eggs 2 teaspoons vanilla extract ½ cup vegetable oil  1 ½ cups flour  ¼ teaspoon ground cinnamon ½ teaspoon salt 1 Tablespoon baking powder 1 cup fresh strawberries, diced

INGREDIENTS

Whisk the Greek yogurt, sugar, eggs, vanilla extract, and vegetable oil until smooth. For the best results, add the eggs one at a time, blending them evenly.

Add the flour, baking powder, cinnamon, and salt to the bowl, and whisk until smooth.

Pour the cheesecake mixture into a graham cracker crust, a pie pan, tall parfait glasses or ramekins.

Fold in the strawberries. Then bake for 50 minutes. Let the cake cool in the pan for about 15 minutes. Then, flip it onto a wire rack to cool completely.

Once the cake has cooled, make the glaze. Smash the strawberries and mix in the powdered sugar and almond extract until smooth.

Pour the glaze over the top of the cake. Let the glaze set for about 5 minutes before slicing and serving.
