Pesto Salmon

Pesto salmon is an easy, healthy dinner that’s just as perfect for a date night in as it is for a weeknight meal!

Olive oil Salmon filets Kosher salt Lemon Black pepper Basil pesto Grated parmesan cheese Panko breadcrumbs

INGREDIENTS

Dry each salmon filet with a paper towel, then place the skin side down on the baking sheet. Stir together the salt, pepper, and lemon zest, then use this mixture to season the tops of the filets.

Spoon the pesto onto the filets and use a spoon to spread it so it covers the top of the fish.

Mix parmesan and the breadcrumbs. Sprinkle this mixture over the top of the pesto, then drizzle the remaining 2 tablespoons of olive oil over the tops.

Bake for 12 to 15 minutes, or until the crust is golden brown and the salmon is cooked through, but still flaky inside. Rest for 1 to 2 minutes before serving.
