Nonstick cooking spray Vegetable oil Onion Green bell pepper Cooked shredded chicken Condensed cream of chicken soup Rotel diced tomatoes with chiles Garlic powder Onion powder Sour cream Fresh cilantro Corn tortillas Shredded Mexican style cheese

Cook the onion and bell pepper for 7 to 8 minutes, or until softened. Reduce the heat to low, then stir in chicken, soup, Rotel, garlic powder, and onion powder.

Cook until everything is heated through, about 4 minutes. Remove from the heat and stir in the sour cream and cilantro.

Arrange half of the tortillas on the bottom of the baking dish, followed by half of the chicken mixture and half of the shredded cheese. Repeat with another layer.

Bake for 30 to 35 minutes, or until heated through and the cheese is completely melted. Let rest for 5 minutes, then serve.

This is one of those dinners you’ll find yourself making again and again, it’s no wonder why—it’s creamy, cheesy, and has all those Tex-Mex flavors everyone loves.
