Instant Pot Pork Roast

Instant Pot pork roast features tender pearl onions, potatoes, mushrooms, and carrots. From start to finish, the whole dish is ready to eat in under an hour!

Pork shoulder Russet potatoes Sliced mushrooms Pearl onions Chopped carrots Olive oil Minced garlic Bay leaves Chicken stock Red wine Cornstarch

INGREDIENTS

Sear the seasoned pork roast on each side. Remove the pork roast, then add and sear the veggies.

Add mushrooms to the Instant Pot. Sear for a few minutes. Stir in the onions, garlic, carrots, potatoes, and bay leaf. Add mushrooms and sear for a few minutes. Stir in the onions, garlic, carrots, potatoes, and bay leaf.

Cook on high pressure for 60 minutes. Do a quick pressure release once the roast has cooked. Remove the cooked pork roast and veggies from the Instant Pot. Whisk in cornstarch mixture.

Slice the pork roast or shred to create pulled pork. Divide it between plates, along with a mix of veggies and potatoes. Top the whole meal with gravy and enjoy!
