Carrot cake cookies are the perfect bite-sized treat! They taste exactly like homemade carrot cake, but they’re so much easier to make.

I’m a big fan of all things carrot cake from classic cake to Carrot Cake Cupcakes. However, these carrot cake cookies might be my favorite recipe yet.

Butter Light brown sugar Vanilla Eggs Grated carrots Flour Baking soda Salt Cinnamon Cornstarch Cream cheese Powdered sugar Milk Chopped pecans

INGREDIENTS

Beat the butter and brown sugar until light and fluffy. Add the eggs and vanilla and mix until blended. Add the grated carrots and stir. Then, add the dry ingredients and stir just until the batter forms.

Scoop the cookie dough into 2 tablespoon-sized balls and place them on the prepared baking tray. Bake the cookies for 10 minutes. Move the cookies to a cooling rack while you make the frosting.

Beat cream cheese and butter until smooth. Add the powdered sugar and beat until fluffy and thick. Add the vanilla and milk and stir.

Use a small offset spatula to spread about a tablespoon of frosting on top of each cookie. Top with chopped pecans, if desired, and then enjoy!

In fact, these carrot cake cookies only take about 15 minutes to put together and 10 minutes to bake. That is much quicker than baking an entire carrot cake!
