This Amish breakfast casserole is a hearty, savory breakfast bake loaded with cheese, hash browns, bacon, and eggs.

Amish breakfast casserole is best served warm, straight from the oven. However, leftovers can be reheated in the microwave or oven and will still be delicious!

INGREDIENTS

Bacon Onion Eggs Frozen shredded hash browns Shredded cheddar cheese Cottage cheese Shredded Swiss cheese Kosher salt Freshly ground black pepper

Cook bacon then add onions and continue to cook until the bacon is crispy and the onions are browned. Drain off the grease.

Add remaining ingredients in a large bowl, then add the bacon and onions. Stir to combine, then pour the casserole mixture into the baking dish.

Place the dish in the oven and bake for 30 to 40 minutes, or until a knife inserted into the center comes out clean.

Let the casserole rest for 10 minutes before serving.

Plus, it can be easily made ahead of time, which is always a bonus—especially if you’re not a morning person!

Try using different kinds of cheese. Gruyere, gouda, or a smoked cheese would all be delicious!

You can store the leftover casserole in the fridge for up to 3 days. Reheat it in the microwave or in a 350ºF oven until it’s warmed through.
