Crockpot Chicken and Noodles

Creamy crockpot chicken and noodles made with tender chicken and egg noodles. This easy slow cooker comfort food is perfect for busy nights!

Ingredients

  • 1 ½-2 pounds boneless, skinless chicken breasts
  • 2 cans cream of chicken soup 10.5 ounce cans
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ½ stick butter sliced
  • 3 ½ cups chicken broth
  • 8 ounces egg noodles uncooked

Instructions

  • Place chicken breasts in the bottom of the crockpot. Top with the 2 cans of cream of chicken soup and spices. Add butter slices to the top. Next, cover with the chicken broth.
  • Cook over low heat for 5-6 hours, or high heat for 3-4 hours. Once complete, remove the chicken from the pot and shred with two forks.
  • Add the shredded chicken back to the pot along with the dry egg noodles and stir. Continue cooking for 30-45 minutes, until noodles are tender. Enjoy!

Notes

  • Don't pre-cook the chicken: Technically, you can cook the chicken ahead of time, but it is meant to slow cook over several hours from raw. If you do decide to cook the chicken before placing everything in the Crock Pot, you will need to adjust the slow cooker time significantly.
  • Use dry noodles: No need to pre-soak or boil your noodles! Toss them straight from the bag or box into the Crock Pot and allow them to cook with the rest of your ingredients. I always make sure that the noodles, especially when dry, are completely submerged while cooking so that they soak up all of the moisture and flavors. Wide egg noodles are a good choice, too!
  • Avoid mushy noodles: You don't want to put the noodles in too soon or cook them for too long. If your noodles seem to be getting mushy, that is a sign that they are ready to come out of the Crock Pot!
  • Add vegetables: Adding onions, carrots, corn and even more fresh herbs is a simple way to take the flavor to a whole new level! I think that adding thyme, rosemary, and fresh parsley sounds amazing also.
