3 eggs, 48 Ritz crackers, 1 cup shredded sharp cheddar cheese, ½ cup whole milk, ½ teaspoon garlic powder, ½ teaspoon ground black pepper, 1 teaspoon salt
Add the ground beef and chopped onions and stir until the mix is evenly blended. Try not to overmix.
2 pounds ground beef, ½ cup white onion
Scoop the ground beef mix into the prepared pan and press it into the pan evenly.
Bake the meatloaf in the preheated oven for 30 minutes.
While the meatloaf is baking, whisk together the ketchup, brown sugar, and mustard in a medium sized bowl.
¾ cup ketchup, 1 tablespoon brown sugar, 1 teaspoon mustard
After thirty minutes in the oven, remove the meatloaf and spread the ketchup topping over the top of the meat in the pan.
Return the meatloaf to the oven to bake for another 30 minutes. The center of the meatloaf should read 160ºF on a cooking thermometer and it will be pulling away from the edges of the pan. The topping will also be nicely browned.
Let the meatloaf cool for about 15 minutes then slice and enjoy!
Notes
If you do not have a loaf pan, you can bake this meatloaf on a parchment-lined baking sheet tray. Simply form the meat mix into a loaf shape and place it on the pan. Bake the same way as written in the directions.
