Preheat your oven to 450°F (230°C).
In a large mixing bowl, add the self-rising flour.

Cut the cold unsalted butter into small cubes and add it to the flour. Use a pastry cutter or your fingertips to cut the butter into the flour until it resembles coarse crumbs.

Add the sour cream to the bowl and mix it into the flour and butter mixture.

Gradually pour in the 7UP soda while stirring the mixture. Stir just until the dough comes together. Be careful not to overmix.

Transfer the dough onto a lightly floured surface. Gently knead the dough a few times until it becomes smooth.
Roll out the dough to about 1/2-inch thickness. You can use a rolling pin or simply pat it down with your hands.
Using a biscuit cutter or a round cookie cutter, cut out biscuits from the dough. Place the biscuits on a baking sheet, leaving a little space between each biscuit.
Brush the tops of the biscuits with melted butter.

Bake the biscuits in the preheated oven for about 10-12 minutes, or until they turn golden brown on top.
Once baked, remove the biscuits from the oven and let them cool for a few minutes.
