- 5 large eggs
- ¼ cup heavy cream
- 1 tbsp unsalted butter
- ¾ cup cooked ham chopped
- ½ cup cheddar cheese shredded, divided
- salt & black pepper to taste
- 10" flour tortillas warmed
In a mixing bowl, add the eggs and cream and whisk together to combine.

Heat the butter in a large saute pan over medium heat until melted. Add the eggs and cook for 3-4 minutes, stirring constantly to scramble. Add the ham and ½ the cheese and continue to stir and cook for 2 minutes, or until the eggs are set but still soft.
1 tbsp unsalted butter, ¾ cup cooked ham, ½ cup cheddar cheese, salt & black pepper to taste
Divide the eggs between the tortillas, top with the remaining cheese, fold the sides in, and roll forward into burritos.
