- 4 tbsp unsalted butter
- 1 large carrot peeled and grated
- 1 bell pepper diced
- ½ large onion diced
- 5 garlic cloves minced
- 2 lb ground beef
- 1 cup ketchup
- 2 tbsp brown sugar
- 2 tsp chili powder
- 1 tsp mustard powder
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp Worcestershire
- 2 8.5oz Jiffy cornbread mix
- 2 large eggs
- 2/3 cup milk
Preheat the oven to 375F.
Add 2 tbsp of butter to a large pan or Dutch oven and place over medium-high heat. Once melted, add the carrots, onions, peppers, and garlic and cook until soft, about 4-5 minutes. Add the ground beef and cook until browned and cooked through, stirring with a spoon to break up the beef. If there is too much fat in the pot, drain some and discard.
Add remaining sauce ingredients and stir to combine. Bring to a simmer and season with salt and pepper. Transfer to a 9x13 baking dish.
Transfer cooked sloppy joe mixture to the prepared casserole dish.
Whisk together cornbread mix, egg, and milk until combined. Spoon over the top of the sloppy joe mixture and carefully spread to cover the mixture.
Bake for 15-20 minutes until the cornbread is golden brown.
