Green Chili Egg Casserole features eggs, cheese, and green chilies for a hearty, comfort food breakfast packed with protein! 

Made with 12 whole eggs and cottage cheese, it’s loaded with protein.

12 eggs ½ cup flour 1 ½ teaspoons baking powder ¾ teaspoon sea salt 2 cups shredded cheddar cheese 1 cup shredded Jack Monterey 2 cups whole milk cottage cheese 6 tablespoons butter, melted 8 ounces canned, diced green chilies

INGREDIENTS

Beat the eggs for 2-3 minutes or until they’re light and foamy.

Add the baking powder, flour, and salt to the bowl. Then, beat slowly until smooth.

Stir in the shredded cheese, cottage cheese, melted butter, and diced chilies. Bake for 35 minutes or until the top and edges are golden brown and the center sets.

Allow the casserole to cool for at least five minutes. Then, slice, serve, and enjoy!
