Earthquake cake is a sticky, sweet chocolate cake that has a coconut and pecan crust and a cream cheese swirl.

1 cup sweetened shredded coconut 1/2 cup chopped pecans 1 (15.25 oz) box chocolate cake mix 3 eggs 1/2 cup canola oil 1 1/4 cups milk 1 teaspoon vanilla extract 1/2 cup chocolate chips 8 ounces cream cheese 1/2 cup butter 2 cups powdered sugar

INGREDIENTS

Sprinkle the shredded coconut and chopped pecans in the bottom of the baking dish and spread them to make an even layer.

Whisk together the cake mix, eggs, canola oil, milk, and vanilla. Pour the batter over the crust. Sprinkle the chocolate chips on top.

Beat the cream cheese and butter, then the powdered sugar. Drop dollops of the cream cheese mixture onto the cake. Swirl the cream cheese into the batter.

Bake for about 50 minutes. Let the cake cool for about 10 minutes, then slice a piece from the pan and enjoy!

Top the cake with some whipped cream and vanilla ice cream, or just enjoy it plain. Earthquake dump cake is flavorful enough all on its own!
