These homemade coconut cookies have perfect, crunchy edges with a soft, chewy center.

Butter Brown sugar Egg Vanilla extract All-purpose flour Cornstarch Baking soda Sea salt Unsweetened shredded coconut


Beat the butter and brown sugar in a large bowl until the mixture is light and fluffy. Add the egg and vanilla and mix them in well. 


Add the flour, cornstarch, baking soda, and salt and mix well. Once the flour mixture is blended into the dough, stir in the coconut and mix again. 


Use a cookie scoop to make two tablespoon-sized dough balls and place them on the prepared sheet tray.


Bake for about 10-12 minutes.


Once the baking time is complete, move the cookies to a wire rack and let them cool completely.
