Churro Waffles

Churro waffles are light and fluffy but also covered in a delicious cinnamon and sugar coating. They are the perfect combination of breakfast and dessert!

2 cups buttermilk 3 eggs 5 tablespoons coconut oil 1 tablespoon vanilla extract 1 tablespoon brown sugar 2 cups flour 1/2 teaspoon salt 1/2 teaspoon cinnamon 2 teaspoons baking powder 1/2 cup sugar 4 tablespoons butter

INGREDIENTS

Follow the manufacturer’s directions to preheat the waffle iron.

Add the buttermilk, eggs, coconut oil, and vanilla to a large bowl and whisk to combine the ingredients.

Add the flour, baking powder, salt, and cinnamon and whisk into a smooth batter. Let the batter sit for 10 minutes to thicken.

Add the cinnamon and sugar for the topping to a small bowl and whisk together. Set the cinnamon sugar aside for now.

Melt the butter for the topping in a shallow bowl and set aside.

 Cook the waffle batter in the waffle iron according to the manufacturer’s directions.

Remove the cooked waffle from the waffle iron and brush both sides with the melted butter using a pastry brush. Dip the buttered waffle in the cinnamon sugar.

Add chocolate sauce, whipped cream, dulce de leche or just enjoy the waffle plain while it is warm!

They are so, SO good, you really don’t need more than just the waffles themselves.
