Cannoli Cake

This cannoli cake is made with a soft, fluffy cake and a sweet ricotta mascarpone filling. It is the best Italian cannoli cake I have ever tried.

Butter Sugar Eggs Lemon zest Orange zest Almond extract Flour Baking Powder Cinnamon Salt Whole milk Ricotta cheese Mascarpone cheese Powdered sugar Orange juice Salt Vanilla extract Mini chocolate chips

INGREDIENTS

Beat butter and sugar until light and fluffy. Add the eggs, then orange zest, lemon zest, and almond extract. Sift the flour, baking powder, salt, and cinnamon.

Alternating between blending in the dry ingredients and the milk. Divide the cake batter between the two greased pans and bake for about 25 minutes.

Beat the ricotta cheese and mascarpone together until smooth. Add the powdered sugar, orange juice, orange zest, and salt then beat until it is light and fluffy.

Frost the cake then top it with the second layer of cake. Decorate using maraschino cherries, orange slices, or mini chocolate chips.
