Birthday Cake

This birthday cake is a classic two-layer yellow cake topped with fluffy chocolate frosting and colorful sprinkles. 

Unsalted butter Cake flour Granulated sugar Baking powder Baking soda Kosher salt Large eggs and egg yolks Buttermilk Vanilla extract

CAKE INGREDIENTS

Powdered sugar  Unsweetened cocoa powder  Unsalted butter  Kosher salt Buttermilk  Sprinkles

FROSTING INGREDIENTS

Mix the flour, sugar, baking powder, baking soda, and salt until combined. Then add the butter and continue to mix.

Turn off the mixer and add the remaining ingredients to the bowl. Then, beat on medium-high speed until the batter is pale yellow and fluffy, about 1 to 2 minutes.

Divide batter into the two prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Let the cakes cool in the pan for 15 to 20 minutes. Remove from pan and the parchment. Trim the dome from the cakes.

Sift the powdered sugar and cocoa into a small bowl. Add the butter and salt to the bowl of a stand mixer fitted with the paddle attachment, then cream until the mixture is light and fluffy, about 3 to 4 minutes.

Add half of the powdered sugar mixture and beat on low speed to incorporate. Increase the speed to high and beat until smooth.

Beat in additional buttermilk a tablespoon at a time if you’d like a thinner frosting.

Place the first cake layer on a large plate and spread a thick layer of frosting on top. Set the other cake on top and use an offset spatula to frost the sides and top.
