This Banana Zucchini Bread recipe combines ripe bananas, shredded zucchini, warm spices, and a pinch of sugar. 

Sweet and satisfying, it’s the perfect way to put your summertime abundance of zucchini to good use!

1 ½ cups all-purpose flour 1 ½ teaspoons baking powder 1 teaspoon baking soda 2 teaspoons cinnamon ¼ teaspoon ground nutmeg ½ teaspoon salt 1 ½ cups grated zucchini 2 eggs 2 mashed bananas ½ cup brown sugar 2 teaspoons vanilla extract ½ cup vegetable oil

INGREDIENTS

Add the grated zucchini to a bowl. Use your hands to squeeze the zucchini, wringing out the excess water. You want the zucchini to be as dry as possible!

Add the flour, baking powder, baking soda, cinnamon, salt, and nutmeg to a large bowl. Whisk until well combined, and set aside.

Add the mashed bananas to the bowl with the zucchini, and stir to combine. Add the brown sugar, vanilla, and oil to the zucchini banana mixture. Stir to combine.

Pour the batter into the prepared pan, and bake for 45 minutes. The top will be lightly brown, and a toothpick inserted into the center will come out clean.

Let the zucchini banana bread cool in the pan for about 15 minutes. Then, flip the bread onto a cooling rack, and let it cool completely.

Just combine the ingredients, and bake. You’ll have a warm loaf ready to eat in under an hour.
