Sloppy Joe Casserole

Ingredients

  • 4 tbsp unsalted butter
  • 1 large carrot peeled and grated
  • 1 bell pepper diced
  • ½ large onion diced
  • 5 garlic cloves minced
  • 2 lb ground beef
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 2 tsp chili powder
  • 1 tsp mustard powder
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire
  • 2 8.5oz Jiffy cornbread mix
  • 2 large eggs
  • 2/3 cup milk

Instructions

  • Preheat the oven to 375F.
  • Add 2 tbsp of butter to a large pan or Dutch oven and place over medium-high heat. Once melted, add the carrots, onions, peppers, and garlic and cook until soft, about 4-5 minutes. Add the ground beef and cook until browned and cooked through, stirring with a spoon to break up the beef. If there is too much fat in the pot, drain some and discard.
  • Add remaining sauce ingredients and stir to combine. Bring to a simmer and season with salt and pepper. Transfer to a 9x13 baking dish.
  • Transfer cooked sloppy joe mixture to the prepared casserole dish.
  • Whisk together cornbread mix, egg, and milk until combined. Spoon over the top of the sloppy joe mixture and carefully spread to cover the mixture.
  • Bake for 15-20 minutes until the cornbread is golden brown.
