Ingredients

  • 1 lb sliced bacon diced
  • 1 medium onion diced
  • 6 large eggs beaten
  • 4 cups frozen shredded hash browns thawed
  • 2 cups shredded cheddar cheese
  • 1 ½ cups cottage cheese
  • 1 cup shredded swiss cheese
  • 1 tsp kosher salt
  • 1 tsp fresh ground black pepper

Instructions

  • Preheat the oven to 350F and grease a 9x13 baking dish.
  • In a large saute pan, add the bacon and cook over medium-high heat for 5 minutes. Add the onion and continue to cook until the bacon is crispy and onions are browned. Drain and set aside.
  • In a large mixing bowl, combine the rest of the ingredients. Add the bacon and onions and stir to combine. Pour into the prepared baking dish.
  • Bake for 30-40 minutes or until a knife inserted into the center comes out clean. Rest for 10 minutes before serving.
