Apple Cinnamon Muffins

Apple cinnamon muffins are a perfect breakfast on a crisp fall morning or an easy go-to after school snack on busy afternoons.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup oil vegetable or canola
  • 1 egg lightly beaten
  • 1/3 cup milk
  • 3 tbsp Granny Smith apple grated
  • 1/4 tsp ground cinnamon

Instructions

  • Preheat oven to 400 degrees F
  • Place liners in muffin tin
  • Whisk together dry ingredients
  • Pour oil into a 1-cup glass measuring cup
  • Beat egg and add to oil
  • Fill measuring cup to the 1 cup mark with milk
  • Beat until well combined
  • Add wet ingredients to dry ingredients and stir until well combined, but don’t over mix
  • Stir in apples and cinnamon
  • Divide batter into muffin tin, fill ⅔ full
  • Bake at 400 degrees F for 15-20, or until a toothpick inserted in the center comes out clean
  • Serve warm or room temperature
  • Store leftovers in airtight container up to four days
