Beer Cheese Dip

Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup beer
  • 1/2 cup whole milk
  • 2 cups freshly-shredded cheese I use cheddar and gruyere
  • 1 tsp grainy dijon mustard or regular Dijon
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/8 tsp cayenne pepper

Instructions

  • Heat butter in a large saucepan or sauté pan over medium-high heat until melted. Add flour, and whisk until completely combined.
  • Add in the beer, milk, Worcestershire, mustard, garlic powder, cayenne pepper, salt and pepper. Whisk until smooth. Continue cooking until the mixture has thickened
  • Add cheese and whisk until smooth.
  • Reduce heat to low. Taste and season the dip with salt and pepper, as needed.
  • Serve. Serve immediately and enjoy! (Dip will thicken a bit the longer it sets.)

Notes

Cheese: Using a block of cheese that you shred yourself is best for this dip. Store-bought shredded cheese typically has a coating that prevents the cheese from melting smoothly.
Consistency: If the dip seems a bit too thick, just whisk in some extra milk. If it seems a bit too thin, add in a bit more cheese.
