Beer Cheese Dip

- 1/4 cup butter
- 1/4 cup flour
- 1 cup beer
- 1/2 cup whole milk
- 2 cups freshly-shredded cheese I use cheddar and gruyere
- 1 tsp grainy dijon mustard or regular Dijon
- 1 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/8 tsp cayenne pepper
Heat butter in a large saucepan or sauté pan over medium-high heat until melted. Add flour, and whisk until completely combined.
Add in the beer, milk, Worcestershire, mustard, garlic powder, cayenne pepper, salt and pepper. Whisk until smooth. Continue cooking until the mixture has thickened
Add cheese and whisk until smooth.
Reduce heat to low. Taste and season the dip with salt and pepper, as needed.
Serve. Serve immediately and enjoy! (Dip will thicken a bit the longer it sets.)
Cheese: Using a block of cheese that you shred yourself is best for this dip. Store-bought shredded cheese typically has a coating that prevents the cheese from melting smoothly.
Consistency: If the dip seems a bit too thick, just whisk in some extra milk. If it seems a bit too thin, add in a bit more cheese.
