This Baked Lemon Chicken Thighs and Potatoes Recipe is easy to prepare and comes together quickly. Simply add the chicken thighs, potatoes, lemon, and garlic into the skillet and bake!

6bone-inskin-on chicken thighs
1/4cupolive oil
salt and freshly ground black pepper
Yukon Gold potatoescut into 1-inch pieces
1lemonsliced into medium slices
5clovesgarlicpeeled
¼cupparsleyoptional
salt + pepper to taste
Instructions
Preheat oven to 425 degrees F
Pat dry your chicken thighs with a paper towel and season on both sides with salt and pepper.
In a cast-iron skillet, add olive oil. (you can use a baking dish or a large baking pan if you don’t have a skillet)
Add the chicken thighs, potatoes, lemon slices, and garlic to the skillet.
Toss everything together to coat well with olive oil.
Add the skillet to the oven and bake for 35-40 minutes – until a meat thermometer reads 160 degrees.
Remove from the oven and allow to cool for 5-10 minutes before serves with a side salad.
