  • 1 package Eckrich Smoked Sausage
  • 1 onion sliced into rounds
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 3 tablespoons olive oil
  • Salt - to taste
  • Pepper - to taste
  • Hoagie rolls
  • Mustard optional


  • Preheat oven to 425 degrees.
  • Arrange the sausages, pepper and onions in a single layer on a baking sheet.
  • Drizzle the olive oil over the sausage & vegetables and sprinkle salt and pepper.
  • Bake for 20-25 minutes until the sausages are brown and the vegetables are cooked.
  • Cut sausages into 3rds and add to buns.
  • Top with veggies and mustard (if desired)
