Ingredients

  • 1 Tablespoon olive oil
  • 1 red bell pepper, diced
  • 2 pounds pork sausage
  • 1/2 cup chopped green onions
  • 12 eggs
  • 1/2 cup sour cream
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat your oven to 350 degrees F. Grease a 9x13 baking dish with cooking spray.
  • Add the olive oil to a large skillet and heat over medium-high heat. Add the bell peppers to the skillet and saute for 3-4 minutes to soften the peppers. Add the ground sausage to the skillet with the peppers and cook for about 10 minutes or until the sausage is no longer pink and has browned.
  • Chop the sausage up with a wooden spoon as it cooks to make small crumbles. Stir in the green onions. Pour the cooked sausage into the prepared baking dish.
  • In a large bowl, whisk together the eggs, sour cream, milk, salt, pepper, and cheese. Pour the egg mix into the casserole dish over the peppers and sausage.
  • Bake the casserole for about 40 minutes. The center will be set, and the casserole will no longer be jiggly. Slice and serve while hot!

Notes

  • Add extra veggies if desired. Mushrooms, corn, jalapenos, and black beans are all good choices. Mix the veggies into the cooked sausage.
  • Any kind of milk can be used. Unsweetened almond milk works well, and evaporated milk, in place of whole milk, adds a nice sweetness.
