Plug in your waffle maker and turn it on to preheat.
Add the buttermilk, eggs, coconut oil, and vanilla to a large bowl and whisk together.

Add the flour, baking powder, brown sugar, salt, and ½ tsp of cinnamon to the bowl and whisk to make a smooth batter. A few small lumps are okay.

Let the batter sit for 10 minutes. This will let the flour absorb some of the liquid and make the batter nice and thick.
While the batter is resting, stir the granulated sugar and tablespoon of cinnamon together in a separate shallow dish.

Scoop the batter into your hot waffle maker and cook the waffles according to the manufacturer's directions. Most Belgian waffle makers will take about 4-5 minutes to cook. The waffles will be golden brown and easily pull away from the waffle iron plates.
Remove the waffle from the waffle iron and brush both sides with the melted butter then dip the waffle in the bowl of cinnamon and sugar, coating both sides.

Repeat cooking the remaining waffle batter, buttering the hot waffles, and dipping them all in cinnamon and sugar.
Drizzle the churro waffles with warm dulce de leche, chocolate sauce, or top with whipped cream. They are also delicious just with the cinnamon and sugar coating!
