Slow Cooker Crack Chicken

Ingredients

  • Nonstick cooking spray
  • 1 ½ to 2 pounds skinless boneless chicken breasts (can also use thighs)
  • 1 ounce packet Ranch seasoning mix
  • 1 ½ teaspoons smoked paprika
  • ½ cup chicken stock
  • 8 oz cream cheese softened
  • 1 ½ cups shredded cheddar cheese
  • ½ cup cooked bacon crumbled
  • ¼ cup green onion chopped

To Serve

  • Burger buns

Instructions

  • Coat the inside of the slow cooker with nonstick spray. Arrange the chicken along the bottom, then sprinkle with the Ranch seasoning and paprika. Pour the chicken stock over the top. Cook on low for 4 to 5 hours until the chicken is cooked through. If using a meat thermometer, the internal temperature will read 165 F.
  • Shred the chicken with a fork, then add the cream cheese. Stir until melted.
  • Add the shredded cheese, bacon and green onions. Mix together until combined. Serve on buns.
