Waffle Cookies

These waffle cookies are crispy, delicious, and so easy to make in a waffle iron!

Ingredients

  • 1 cup butter, softened
  • 1 ½ cups dark brown sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 3 ½ cups flour
  • ½ teaspoon cinnamon
  • teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  • Turn on your waffle iron to preheat.
  • Add the butter and brown sugar to the bowl of a stand mixer and beat with a paddle attachment until light and fluffy.
  • Add the eggs to the bowl one at a time, mixing after each addition.
  • Add the vanilla extract and almond extract and blend well.
  • Add the flour, cinnamon, baking soda and salt and mix again to make a thick, smooth batter.
  • Scoop two tablespoons of the waffle batter on to the center of the hot waffle iron. Close the top of the waffle iron and let the waffle cookie cook until golden brown. This takes about 3-4 minutes in most waffle iron but every one will be a little different. When the cookie is ready, it will easily pull away from the waffle iron and not stick at all.
  • Place the cookie on a cooling rack and continue to cook the rest of the batter the same way.

Notes

  • If your waffle iron is able to make more than one waffle at a time, you can cook multiples. The batter typically goes in the center of the waffle iron grid to make the best pattern.
  • These waffle cookies bake beautifully with all purpose gluten free flour in place of regular flour. Use your favorite gluten free baking mix to make delicious gluten free waffle cookies. 
  • Replace the vanilla extract with a tablespoon of dark rum. Some traditional French waffle cookie recipes use rum rather than extract for a tasty flavor twist.
