- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp kosher salt
- 3 Granny Smith apples peeled and diced
- 1 cup walnuts chopped (optional)
- 1 1/2 cups canola oil
- 1 3/4 cups granulated sugar
- 2 tsp vanilla extract
- 2/3 cups unsweetened applesauce
- 3 large eggs
Preheat the oven to 350F. Lightly grease and flour a 10-12 cup Bundt pan.
In a medium mixing bowl, add the flour, baking soda, cinnamon, nutmeg, & salt. Whisk to combine. Add the diced apples and walnuts and toss to coat.
In another mixing bowl, add the oil and sugar and whisk to combine. Add the vanilla and applesauce and continue to whisk until smooth. Add the eggs, one at a time, whisking to combine each one before adding the next.
Fold in the dry ingredients and mix until just incorporated. Pour the batter into the prepared pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before removing it to a rack to finish cooling to room temperature.
