Apple Bundt Cake

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp kosher salt
  • 3 Granny Smith apples peeled and diced
  • 1 cup walnuts chopped (optional)
  • 1 1/2 cups canola oil
  • 1 3/4 cups granulated sugar
  • 2 tsp vanilla extract
  • 2/3 cups unsweetened applesauce
  • 3 large eggs

Instructions

  • Preheat the oven to 350F. Lightly grease and flour a 10-12 cup Bundt pan.
  • In a medium mixing bowl, add the flour, baking soda, cinnamon, nutmeg, & salt. Whisk to combine. Add the diced apples and walnuts and toss to coat.
  • In another mixing bowl, add the oil and sugar and whisk to combine. Add the vanilla and applesauce and continue to whisk until smooth. Add the eggs, one at a time, whisking to combine each one before adding the next.
  • Fold in the dry ingredients and mix until just incorporated. Pour the batter into the prepared pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 15 minutes before removing it to a rack to finish cooling to room temperature.
