Cowboy Cookies

Cowboy cookies are a true flavor bomb. They combine chocolate chips with oats, pecans, cinnamon, and coconut.

Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp baking soda
  • 1 tbsp baking powder
  • 1 tbsp ground cinnamon
  • 1 tsp kosher salt
  • 1 1/2 cups unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups brown sugar packed
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 3 cups chocolate chips
  • 3 cups rolled oats
  • 2 cups sweetened coconut flakes
  • 2 cups pecans toasted and chopped

Instructions

  • Preheat the oven to 350F.
  • In a bowl, mix together the flour, baking soda & powder, cinnamon, and salt.
  • In the bowl of an electric stand mixer fitted with a paddle, beat the butter on medium speed until light and fluffy. Gradually add the sugars to combine, about 2-3 minutes. Add eggs, one at a time, until combined. Add the vanilla and continue to beat for another minute.
  • Stir in the dry ingredients until just combined, followed by the chocolate chips, oats, coconut, and pecans.
  • Portion ¼ cup of dough per cookie onto an ungreased baking sheet three inches apart.
  • Bake for 17-20 minutes, rotating the pan halfway through, or until the edges of the cookies begin to brown.
