Ingredients

  • 1 package 30 ounces frozen shredded hash brown potatoes thawed
  • 2 cups cubed fully cooked ham
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup shredded pepper jack cheese
  • 1/2 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup chopped green onions

Instructions

  • Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray
  • In a large bowl, combine potatoes, ham, and seasonings; spread evenly into pan. Sprinkle with cheeses.
  • Bake until golden brown, 25-30 minutes.
  • With the back of a spoon, make 6 wells in potato mixture. Break an egg into each well. Bake until egg whites are completely set and yolks begin to thicken but are not hard, 10-12 minutes. Sprinkle with green onions and additional pepper.
