Apple Cinnamon Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/3 cup oil vegetable or canola
  • 1 egg lightly beaten
  • 1/3 cup milk
  • 3 Tablespoons Granny Smith apple grated
  • 1/4 teaspoon ground cinnamon

Instructions

  • Preheat oven to 400 degrees F.
  • Place liners in a muffin tin.
  • Whisk together dry ingredients.
    1 1/2 cups all-purpose flour, 3/4 cup granulated sugar, 1/2 teaspoon salt, 2 teaspoon baking powder
  • Pour oil into a 1-cup glass measuring cup.
    1/3 cup oil
  • Beat egg and add to oil.

  • Fill measuring cup to the 1-cup mark with milk. Beat until well combined.

  • Add wet ingredients to dry ingredients and stir until well combined, but don’t over mix.
  • Stir in apples and cinnamon.
    3 Tablespoons Granny Smith apple, 1/4 teaspoon ground cinnamon
  • Divide batter into muffin tin, fill ⅔ full.
  • Bake at 400 degrees F for 15-20, or until a toothpick inserted in the center comes out clean.
  • Serve warm or room temperature.
  • Store leftovers in an airtight container for up to four days.
