- 1 package Eckrich Smoked Sausage
- 1 onion sliced into rounds
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 yellow bell pepper sliced
- 3 tablespoons olive oil
- Salt - to taste
- Pepper - to taste
- Hoagie rolls
- Mustard optional
Preheat oven to 425 degrees.
Arrange the sausages, pepper and onions in a single layer on a baking sheet.
Drizzle the olive oil over the sausage & vegetables and sprinkle salt and pepper.
Bake for 20-25 minutes until the sausages are brown and the vegetables are cooked.
Cut sausages into 3rds and add to buns.
Top with veggies and mustard (if desired)
