Zucchini Muffins

These sweet Zucchini Muffins are the perfect way to use your extra garden zucchini! 

Tender and moist with warm spices and the option to add chocolate chips, they only take about 10 minutes to combine!

2 zucchinis 2 eggs 1 1/3 cups light brown sugar 1 tablespoon vanilla extract 3/4 cup melted butter 2 3/4 cups flour 1 teaspoon baking soda 1 teaspoon baking powder 1 tablespoon cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon salt 1 cup chocolate chips

INGREDIENTS

Grate the zucchini into a fine mesh sieve. Press the zucchini in the sieve to extract all the water.

Add the eggs, zucchini, brown sugar, and vanilla extract to a large bowl, and stir until smooth. Add the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Fold in the chocolate chips.

Divide the batter into the baking tin. Bake for about 25 minutes or until the tops of the muffins are golden brown.

Let the muffins cool for about 10 minutes. Then, remove them from the muffin tin. Enjoy while warm!
