Zucchini Muffins

These sweet zucchini muffins are the perfect way to use your extra garden zucchini.

They’re tender, moist, and only take about 10 minutes to put together!

Zucchini Eggs Light brown sugar Vanilla extract Butter Flour Baking soda Baking powder Cinnamon Ground nutmeg Salt Chocolate chips

INGREDIENTS

Grate the zucchini into a fine mesh sieve. Press the zucchini in the sieve to extract all the water.

Add the eggs, zucchini, brown sugar, and vanilla extract to a mixing bowl and stir.

Add the flour, baking soda, baking powder, cinnamon, nutmeg and stir into a smooth, thick batter. Fold in the chocolate chips, if using.

Bake the muffins for about 25 minutes. Let cool for about 10 minutes, then remove them from the muffin tin and enjoy while warm!

The trick, of course, is that when you bake with zucchini, you can’t even taste it! Add chocolate chips and turn these into a total dessert.
