Icebox Cookies

Icebox cookies are a holiday classic, but there’s no reason you can’t make them year-round!

Butter Granulated sugar Egg Vanilla extract All-purpose flour Baking powder Salt

INGREDIENTS

Cream butter and sugar. Beat in the egg and vanilla, then flour, baking powder, and salt. Mix until a smooth dough forms. Fold in the mix-ins now if you'd like.

Roll the dough into a log about 2 inches in diameter. Wrap the log with plastic wrap, then refrigerate for at least 4 hours.

Unwrap the cookie dough log and slice it into ¼-inch slices. Place the slices on the baking sheet about 2 inches apart.

Bake for 10 minutes then transfer cookies to a wire rack and let them cool completely before storing.
