These cake mix cookies aren’t made from scratch but they are an easy homemade cookie made with just 5 minutes of prep and 10-12 minutes to bake.

Because cakes and cookies aren’t all that different in texture, cake mix is perfect for making chewy cookies right out of a box of cake mix!

If you’re a fan of Red Velvet Cake or Red Velvet Brownies, you’ll love this cookie that is bursting with the taste of red velvet with pops of white chocolate throughout!

They also keep well for a few days because of their high oil content.

How to Make Red Velvet Cake Mix Cookies

 Duncan Hines cake mix is perfect for this recipe, the 15.25-ounce box. I love white chocolate chips in these cookies but you could easily sub them out with semi-sweet or dark chocolate chips.

Ingredients: 

  • Red Velvet Cake Mix
  • Vegetable Oil
  • Eggs
  • White Chocolate Chips

Directions:

  1. Preheat oven to 350°F. Line two large baking sheets with parchment paper.
  2. In a large mixing bowl, cake mix, oil, and eggs and mix until fully combined.
  3. Fold in the white chocolate chips until well combined.
  4. Using a medium cookie scoop, add cookie dough onto the baking sheet. Do not overcrowd as the cookies will spread.
  5. Bake for 10-12 minutes or until the tops of the cookies are set.
  6. Remove from the oven and allow the cookies to cool for 5-10 minutes on the baking sheet, then transfer them to a wire rack.

    I added a TBSP of cream cheese flavoring and it gave these that little hint of flavor I felt they were missing. Great recipe!

  3. I just made these, and they turned out darker and less red than the pictures. Also, mine did not lay as flat as these-they are thicker and denser. I did use Betty Crocker cake mix, so perhaps that’s the difference.
