Hey all! My house is always a bit crazy and chaotic. Comfort food, homemade cakes, coffee, and cocktails are my jam, usually. But there are many days when I pull out these cake mix cookies for a quick treat in my home.

Nothing beats this recipe for a quick, delicious, and simple cookie my whole family loves!

Usually, I use Betty Crocker chocolate cake mix for this recipe but any kind of chocolate cake mix will work fine! Try to stick with a cake mix, and not a brownie mix (yes, I totally have made that mistake!).

Can I use any flavor cake mix for cake mix cookies?

Absolutely you can use any flavor of cake mix to make cake mix cookies! Obviously, the flavor cake mix you choose will change the outcome of the cookies. Try strawberry, vanilla, or even lemon cake mix!

You might want to leave the peanut butter out of some of those options, however. Lemon cake and peanut butter might not be everyone’s favorite flavor combo. Hey, maybe it is?

You can also add different mix-ins to your cookies to customize them, like in this Cake Mix M&M Cookies recipe.

Rather than the usual ingredients, make the cake mix using only 1/2 cup of oil and two eggs. The texture will be much, much thicker than that of cake batter much more like the cookie batter consistency we are looking for.

Tip: Throw the batter in the fridge for 20-30 minutes before forming into balls. This helps you be able to work with it better as well as keeping it from melting down in the oven too quickly.

I think these little bundles of chocolate and peanut butter goodness look like little meatballs :). Folding the peanut butter into the center of the cookie is the best way to keep it from melting and dissolving when it is baked up. Adding sugar to the peanut butter helps give you enough texture and substance to fold it in.

Tip: I love to use chunky peanut butter and throw some mini chocolate chip cookies into the cookie batter. The chips and peanuts add great texture!

How to add peanut butter to cookies made from cake mix:

Simply grab about 1 tablespoon of chilled cookie dough batter and form it into a round patty, insert the chilled peanut butter, and form your cookie ball trying to keep as much of that peanut butter inside as possible.

They will come out of the oven warm and gooey. Here’s the cool part about these peanut butter chocolate cake mix cookies…they are BETTER after they cool. No really, try it.

The peanut butter comes back to room temp and stops its melty business, the cake mix cookie gets crinkly and crispy and you have this gorgeous mix of creamy peanut butter and crinkly chocolate. I’m telling you…this recipe is a winner!

My 16 year old son brought them to band practice (like rock band wanna-be practice, not school band. Sigh.)

Full of delicious creamy peanut butter and delicious chocolate, these easy cake mix cookies are sure to please!

Ingredients  

  • 1 box chocolate cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup peanut butter
  • 2 tablespoons sugar

Instructions 

  • In a large bowl, beat the cake mix, oil, and egg together. Chill for 20-30 minutes.
  • In a small bowl, mix the peanut butter and sugar together. Chill for 20-30 minutes.
  • Preheat the oven to 350 degrees.
  • When chilled, form about 1 tablespoon ( you can make them larger, if you prefer ) of cookie dough into a patty.
  • Set about 1 teaspoon of the chilled peanut butter into the center of the patty and form the cookie dough around it into a ball shape.
  • Place the formed balls on to an ungreased cookie sheet.
  • Bake at 350 degrees for about 8 minutes or just until the edges are dry and the tops aren't jiggly. Do NOT overbake.
  • Remove from the cookie sheet and place on a cooling rack. Cool.

    I make these all the time, they’re so good! You definitely need to chill the dough and peanut butter in order to make them, otherwise way too sticky to form the balls. Super easy!

    I was real disappointed with this recipe the Doe was so soft in wouldn’t form a patty . I let the doe chill for 35-40 minutes. I used flour ( quite a bit) to get it to pat out.

    1. You don’t really form a patty, just a ball and press in the center to add peanut butter. They flatten from balls into cookies as they bake.
