Nicer weather means it’s picnic and grilling season. And with that comes eating lighter foods outside! One of my favorite things to do is head outdoors with a yummy dish to share with friends while the burgers are grilling and the kid are playing. There’s so many dishes I love to take to gatherings, but one that is super easy to make when you’re in a time crunch or want to make on a budget is Texas Caviar!

There’s so many variations of this recipe, you could quite literally grab your favorite canned veggies off the shelves and add in Italian dressing and be good to go! This recipe is quick, easy and very budget friendly. I picked up my ingredients at Dollar General the other day when I ran in for some fun picnic plates, bowls and cups! Corn, pinto beans, black beans, kidney beans are always a good bet when making this dish! I love serving this alongside Jalapeño Poppers!

Dollar General is the ideal place to get your picnic and grilling needs . They have many of the traditional staples (condiments, paper plates, and utensils) on the shelves at lower prices than most stores. Whip up your favorite picnic item, picnic side item or picnic drink with supplies purchased from Dollar General using Clover Valley replacement ingredients and DG Home paper products wherever you can. I did and it saved me some money for sure!

Texas Caviar

Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients  

  • 1 can corn
  • 1 can black beans
  • 1 can pinto beans
  • 1 can kidney beans
  • 1/2 red onion - diced
  • 1 bunch scallions
  • 1 bunch cilantro
  • 1 jalapeno pepper - diced
  • 1 clove of garlic - diced
  • 1/2 cup zesty Italian dressing

Instructions 

  • Drain and since all cans of beans and corn
  • Add to big bowl
  • Add in remaining ingredients and stir
  • Chill in refrigerator for 2 hours before serving
  • Serve with tortilla chips
